I knew core speed was critical to me and that I would run ONE video card, not two, so I went ahead with an LG1156 socket processor.
The LG1156 uses DUAL channel ram, the LG 1366 TRIPLE channel so if ram is a concern, use the LG1366.
Also, PCI-e bus lanes... the LG1156 gives you 16 lanes if use a single card but with two cards each card will SHARE the 16 lanes between them (8 lanes each).
If you are going to use 2 video cards use the LG1366 which will give each video card (two cards) the full 16 lanes.
Just an FYI.
If you are a Big Ram user or two video card kind of person, try the I7-920 or another of the LG1366 CPUs

I would love to afford one (okay two) but so far very happy with my crucial 64 gig ssd... except its too small...
