It has interior detail, but he noticed there are only two seats in the turret. Is this correct or should it have three seats? As much detail as the kit has it seems odd for them to leave something like that out.

The Gunner had a seat attached to the frame of the gun assembly and Commander had a fold down seat attached to the turret ring. The Loader on the other hand had a small saddle attached by snap-ties.
So technically two seats and a ass-hammock.
My guess is that your dad's T-34 models the the gunners and commanders seats and not the cloth or leather (I don't know what material it was made of) saddle.
